Happy birthday [personal profile] rikes!

My stitches are really irritating me.
Since I am still on a soft food diet, does anyone have any recipes they might like to share? Meatless soups, fun things to do with cheese, etc.

Anybody going to any SuperBowl parties this weekend? I'm not. Even if I had been invited to one, I couldn't eat any of the food there anyway. :(

Easy potato soup:

1 - 2 baking potatoes already baked. scoop out insides and dice add milk (or if like rich cream) to moisten and process in blender or food processor until fine, adding milk or cream as go to desired consistency - I use a mix of 1 part cream to 2 parts milk. You don't want to over process or the mix will get gummy. Heat on stove or in microwave. You can add salt, cheese, or sour cream, garnish with green onions - just like a baked potato. Or simply salt & pepper to taste.

This is wonderful comfort food.

I can't guarantee that this is the recipe 100% but it was like my lord and savior when I had my wisdoms out. My mom made me some and it made me so happy. I guess she used veggie broth but that's probably obvious.


Creamless Creamy Tomato Soup from Cooks Illustrated:
2 Tbs. EVOO
1 small onion, chopped
3 med. garlic cloves minced
1/8 t. hot red pepper flakes (optional --- and I used more)
1 bay leaf
2 (28oz) cans whole tomatoes
2 t. sugar
2 large slices good quality white sandwich bread, torn into 1 in. pieces
2 cups low sodium chicken broth
table salt and ground black pepper
1/4 cup chopped fresh chives
1. Heat oil in Dutch oven over med-high heat. Add onion, garlic and red pepper, stirring, until onions are translucent. Add bay leaf and tomatoes. Using spoon, press tomatoes against sid of pot to release juices. Stir in sugar and bread. Cook, stirring constantly, until bread starts to break down (5 min).
2. Transfer soup to blender and blend until smooth and creamy (I used a hand blender). Return soup to pot and stir in chicken broth, bring to a boil and season with S&P. Serve in bowls and sprinkle with black pepper, chives, and a drizzle of olive oil.

Do you have a blender of any kind? I've been making a ton of smoothies lately with an hand blender/immersion blender but those are seriously to taste (my favorites are pomegranate juice, frozen strawberry/mango/pineapple mix, frozen blueberries, soy yogurt, soymilk and some frozen spinach- I bet without the spinach they'd taste less like health food.)

I was going to go down to the city and see the game with my brother (probably in a couple of different sports bars, and I'm not sure I'd be able to tell you who won), but it's looking like I'll be snowed in. Grrr . . .

Sorry I don't have any recipes for you. I pretty much survived on vanilla pudding after oral surgery. Are scrambled eggs too solid? 'Cause if not, there's all kinds of fun experiments you can do with cheese/onions/peppers/whatever.

I'm actually hosting a Super Bowl party, but it is for the youth group that I am trying to get off the ground at my church, so not quite like the last one I was at.

I'm going to a Super Bowl party! And will probably be grading papers while there. ;-) I don't really care about football anyway. I'm very lucky that there's a group of coworkers who are fun to hang out with, or I would be completely pathetic with my lack of real-life social connections.

I remember having a lot of McDonalds chocolate milkshakes when I had braces. For some reason I found them yummy (and McDonalds = ick generally). Of course, you're not one for chocolate.

Other than that I can really think of no other suggestions. (Um, I have some dehydrated potato soup for when I'm sick?) I suck!

*hugs* keep up with the healing! (and the salt water washes--they're icky, but infection is worse.)
