Checking out isn't hard! Here's what I usually say to my customers:

Me:Hi, how are you?
Customer: Fine, you?
Me: I'm doing alright.

Me: You total is
[Error: Irreparable invalid markup ('<take money/bag>') in entry. Owner must fix manually. Raw contents below.]

Me: And your change is
Me: Have a good one!

Short, sweet, and to the point. If it's a regular I'll prolly harass them a bit though ;-)
